Chicken Curry
This is a great and easy dish, great for adding vegetables and very kid friendly.
This recipe is for 4 people
Ingredients:
400 g chicken breast
Salt
black pepper, freshly ground
Curry sauce:
1 onion, finely chopped
1 clove garlic, finely chopped
2 tablespoon curry, medium, adjust according to strength
1 teaspoon crushed cumin
1/2 teaspoon crushed cardamom
1/2 teaspoon crushed turmeric
1/2 teaspoon crushed coriander
2 dl chicken broth
3 dl milk
2 tablespoons cornstarch
1 dl milk, for thickening
1/2 dl whipping cream
2 tablespoons olive oil
salt
black pepper, freshly ground
Rice
2 1/2 dl basmati rice
5 dl water
Salt
topping you can add *optional:
apple
pineapple
coconut
raisins
how to do:
The chicken:
Start by boiling some water for the chicken breast, when the water is boiling add the salt and pepper. Cook it for 30 minutes
Rice
Rinse the rice thoroughly, put them in a saucepan along with a little salt. Cook the rice according to the instructions on the package.
Curry Sauce
Saute onions, garlic and spices in a pan with olive oil for a few minutes, until the onions are tender and clear. Come milk and chicken broth. Let it simmer for a few minutes. Meanwhile, shake a little cornstarch along with milk and put it in the pan. Stir well while the sauce boils and smooths until it has a good consistency. Season to taste with cream, salt and pepper.
At last take the chicken out of the boiling water, and shred the chicken with two forks then add them to the curry Sauce
