Taquitos
Make it the easy way or explore a more challenging version

You can make these for a fun family dinner in a quickie or you can challenge yourself by making your own tortilla (which is quite easy, recipe coming soon)
This recipe will make 12 taquitos (you can always add up if you want some more)
Ingredients:
2 chicken breast (corresponding to 400 grams)
200 grams of cream cheese
100 grams of shredded mozzarella cheese
2 jalapeño *optional
1 fajita seasoning package (for the easy way or find a spice mix recipe here)
1 pack of tortilla (Store bought or find my recipe here)
Salt and pepper
How to do:
Boil a pot of water, with salt and pepper. When the water is boiling add the 2 chicken breasts. Boil them for 30 minutes. While the chicken breasts are boiling.
Start this process when the chicken has cooked for 15 minutes.
Set your oven to 200 Celsius or 390 Fahrenheit
Take another pot, put it on medium heat, now add the cream cheese keep an eye on it and stir when needed. Dice the jalapeño into small pieces. When dice add to the pot with the cream cheese. Then add the fajita mix and stir it all together
Take the chicken breast out of the boiling water and start shredding it with two forks. Add the shredded chicken to the pot with the cream cheese, jalapeño and fajita mix. At last add the shredded mozzarella to the pot. Let it cook for 5 minutes. Now take the tortillas (I like to cut them in to halves) now spread about 2 tablespoons of the mix where you cut the tortilla (or in the middle if you didn’t cut them), now roll them up, put them on a baking tray. Bake them in the oven for 10 minutes. Now they are ready to serve.
TIP: add some shredded mozzarella and jalapeño to the top of the taquitos before baking.
TIP: add vegetables to the mixture. Bell peppers, carrots, onion etc. Are great and good for hiding vegetables for kids
